3 Pound Belgian Aromatic 26L
2 Pound British Carastan 30L
2.5 Ounce Centennial Pellets 9.7% AA - 90 min
2.5 Ounce Simcoe Pellets 12.0% AA - 90 min
1.5 Ounce Chinook Pellets 14.0% AA - 60 min
1.5 Ounce Magnum Pellets 14.0% AA - 30 min
4 Ounce Cascade Pellets 5.3% AA - Dry Hop
2 Ounce Liberty Pellets 4.1% AA - Dry Hop
1 Ounce Simcoe Pellets 12.0% AA - Dry Hop
1 Tsp Irish Moss @ 20 min
32 Ounce WLP002 - English Ale Yeast

Brewing Notes  

Single step infusion with 1.2 qts water/lb grain. Mash grains at 151F and add 1.25 gallons boiling water and raise temp to 168F to mash out for 15 minutes. Sparge at 172F for 45 minutes. Use a 120 minute boil and add remaining hops according to schedule. 100 total IBUs. 8.0% ABV. (May substitute 1 Whirlfloc tablet for Irish Moss)

Fermentation Notes  

Pitch a 32 oz starter and highly oxygenate wort after pitching. Ferment primary at 66F for 14 days and secondary at 66F for 10 days. Dry hop in secondary fermenter.
