Ingredients List  

4.25 lb Alexander Light LME
2.5 lb Belgian 2-row pils malt
1.25 lb flaked maize
0.4 lb Cara Pils Malt
0.6 lb American wheat malt
3 oz Simpsons Golden Naked Oats
2 oz cara-foam malt
0.7 oz Liberty pellets, 3.6% alpha; mash hop
1.6 oz Mt Hood pellets, 3.8% alpha, 75 min boil
0.7 oz Liberty pellets, 3.6% alpha; 15 min boil
0.4 oz Saaz pellets, 3% alpha, 10 min boil
0.28 oz Liberty pellets, 3.6% alpha; 10 min boil
0.65 oz Saaz pellets, 1 min boil & 15 min steep
1 vial WLP 810 San Fran Lager Yeast
7 gal R/O water
0.5 tsp gypsum
0.5 tsp Calcium Chloride
0.25 tsp calcium sulfate

Brewing Notes  

Mash grains at 154F for 75 minutes in 1.5 gal water. Add 3.5 gallons 175F water during mash to maintain temperature. Add mash hops 40 minutes from finish. Raise temp to 175F for 10 minutes. Sparge with 175F water till 5.5 gallons wort attained. Mix in extract and add 1.0 gallons boiling water. 100 minute total boil with hop additions at 75, 15,10, and 1.0 minutes from finish.

Fermentation Notes  

Pitch yeast in 1.5 liter starter. Run primary ferment for 10 days at 56F Rack to secondary and run at 36F for 21 days.
