Ingredients List  

4 lb Orange Blossom Honey
4 lb Starthistle Honey
3 lb Commercial Honey
5 gal filtered water
1 pckg Lalvin D-47 yeast

Brewing Notes  

Heat honey and water to 160F and hold for 20 minutes.

Fermentation Notes  

Pitch yeast when cool to room temp. Run primary for 3 months. Rack and run secondary for 3 months. Keg and keep under a blanket of CO2. Aged 4.5 years at competition time. 9.1% ABV.
