Ingredients List  

3.5 lb John Bull LME syrup
0.5 lb Munton dry LME
0.67 cups Dark Molasses
2.25 lb Maris Otter Pale Malt
1.25 lb Pauls Mild Ale Malt
1 lb 65L English Crystal
0.3 lb Cara Pils Malt
0.3 lb Special B malt
2 oz Weyermann's de-husked carafa choc malt
1 tube White Labs WLP013 , London Ale Yeast
1 oz Challenger hop pellets, 7.1% alpha (90 min boil)
0.7 oz Progress pellets, 6.2% (10 min boil)
0.75 oz East Kent Goldings pellets, 4.2% (steep 5 min)
3 tsp gypsum
1 tsp Irish Moss

Brewing Notes  

Dough-in to 1.5 gallons water at 153F for 15 minutes. Raise temperature to 158F with hot water (190F)and maintain for 70 minutes. Knock out at 170F for 10 minutes using hot water (190F). Sparge with 190F water till 4.2 gallons attained. 100 minute total boil time with hops started at 90. Irish moss added in last 20 minutes.

Fermentation Notes  

Pitch yeast in active 0.6L starter. Primary fermentation at 66F for 3 weeks. Rack to secondary and age at 60-66F for 2 months. Age liberally in bottle (8 months at least).

Original gravity: 1.088
Final gravity: 1.022
