Ingredients List  

15 lb Briess American 2-row malt
1 lb American Cara-Foam/Dextrine Malt
1 oz Columbus Pellets (14.5% AA) Mash Hops
1 oz Chinook pellets (11.3% AA) FWH
1 oz Centennial pellets (9.7% AA), 60 min boil
2 oz Cascade pellets (5.7% AA), 1 min boil
2 oz Cascade pellets (5.7% AA), Dry hop
1 oz Centennial pellets (9.7% AA), Dry hop
1 oz Columbus pellets (14.5% AA), Dry hop
1 tsp Irish Moss
32 oz WLP008 East Coast Ale Yeast (in starter)

Brewing Notes  

Single step infusion with 1.2 qts water/lb grain. Mash grains at 150F and add mash hops for 120 minutes. Add 1.25 gallons boiling water and raise temp to 168F to mash out for 10 minutes. Sparge at 168F for 35-45 minutes. Add FW hops to brew kettle as sparge begins. Use a 90 minute boil and add remaining hops according to schedule. 95 total IBUs.

Fermentation Notes  

Pitch a 32 oz starter and highly oxygenate wort after pitching. Ferment primary at 65F for 10 days and secondary at 65F for 10 days. Dry hop in secondary fermenter.
