Ingredients List  

11 lb Klages 2-row
1 lb 40 L Crystal
0.5 lb Light Munich Malt
1 oz Cascade hops, 6.9% - FWH
0.8 oz Chinook hop pellets, 12.9%, 60 min boil
1 oz Cascade, 6.9%, flame-out
1 oz Amarillo, 8.4%, dry hop
1 tsp Irish Moss
2 tbsp Gypsum
1 tube White Labs WLP004 Irish ale yeast

Brewing Notes  

Mash efficiency 70%. Add 3.13 gallons 175 F water to heat mash to 151 F for 60 min mash. Add 1.78 gallons boiling water to mash out at 170 F. Sparge with 3.18 gallons water. Water absorbed by grain - 1.25 gallons. Evaporation during boil - 1.5 gallons. First wort hop with 1 oz Chinook. 60 minute hop boil. Flavor hops at 20 minutes. Irish moss at 15 minutes left. Cut heat and add finish hops; steep 15 minutes.

Fermentation Notes  

Primary - 13 days at 65 F. Secondary - 8 days at 70 F. Dry hop secondary for 1 week.
