Ingredients List  

10 lb Belgian 2-row malt
0.5 lb Belgian Cara-Munich (48 L)
6 oz Belgian aromatic malt (21 L)
11 oz German light crystal (10 L)
1.35 lb Belgian clear candi sugar
2 lb Laglaander DME
2 oz Styrian Goldings hops (4% alpha)
0.7 oz Styrian Goldings hops (4% alpha)
0.7 oz Czech Saaz hops (3.6% alpha)
0.8 oz Styrian Goldings hops (4% alpha)
1 tube WLP550 Belgian ale yeast in starter
0.3 tube WLP500 Trappist ale yeast in starter
Recultured yeast from mystery bottle of Belgian

Brewing Notes  

Mash in at 129 F in 3.5 gallons water for 20 minutes. Raise temperature to 152 F for 90 minutes. Raise to 158 F for 20 minutes. Raise temperature to 168 F and mash out. Sparge with 175 F water till 6.25 total gallons attained. Boil wort for 100 minutes, adding boil hops at 90 minutes.

Fermentation Notes  

Pitch yeasts and aerate thoroughly. Primary fermentation at 72 F for 7 days. Secondary fermentation at 72 F, plus 2 weeks at 63 F.

Original gravity: 1.086
Final gravity: 1.018
