Ingredients List  

7 lbs DWC Pale Ale malt
1 lbs carapils
1 lbs crystal (10L)
1 tsp irish moss
3 oz Fuggles pellets (4.5% alpha in nylon, 60 minutes)
1 oz Fuggles pellets(4.5% alpha in nylon, 10 minutes)
Wyeast 1318 London Ale III

Brewing Notes  

Mash in with 2 1/2 gallons at 140F. Protein rest 30 minutes at 135F. Raise temperature to 153F; hold for 2 hours starch conversion rest. Mash out at 168F. Sparge with 5 gallons at 164-168F. Boil 90 minutes. Add 3 oz. (13.5 AAU) bittering hops at -60, irish moss at -15, 1 oz. finishing hops at -5.

Fermentation Notes  

Primary fermentation should last 7 days at 75-80F. Transfer to secondary fermenter for 7 days. Rack the beer off the yeast before bottling with 1 cup corn sugar. Bottle condition for one week.
