Ingredients List  

10 lbs Munich malt
10 lbs Briess pale malt
1 lbs DWC caramunich 62L
1 lbs flaked barley
1 lbs carapils
4 ozs chocolate malt
2 ozs black malt
2 lbs Laaglander light DME (add to boil)
0.5 ozs Hallertauer (3.2% alpha, 60 minutes)
1 ozs Czech Saaz (3.8% alpha, 60 minutes)
1 ozs Czech Saaz (3.8% alpha, 45 minutes)
1 tbsp yeast nutrient
1 tsp Irish moss
Wyeast Munich Lager 2308

Brewing Notes  

Mash in at 140 degrees for 1/2 hour. Pull 6 quarts decoction (boiled for 1/2 hour). Return decoction to mash and stabilize at 150 degrees. Sparge with 4 gallons at 168 degrees with 1 tsp 88% lactic acid. Boil 90 minutes.

Fermentation Notes  

Primary at 60 degrees. Cask condition at 73 degrees for four months.
