Ingredients List  

12 lbs DWC Pilsner malt
0.5 lbs carapils malt
1.3 lbs flaked maize
0.5 lbs corn flakes
1 oz Perle hops (6.5% alpha, 60 minutes)
0.5 oz Hallertau hops (3.8% alpha, 60 minutes)
0.5 oz Hallertau hops (3.8% alpha, 30 minutes)
1 oz Tettnanger hops (4.7% alpha, 30 minutes)
1 oz Saaz hops (3.2% alpha, 5 minutes)
Wyeast Czech Pils yeast

Brewing Notes  

Mash grains at 126 degrees for 20 minutes. Decoct about 1 gallon of stiff mash for 20 minutes. Return to main mash to reach saccrafication temperature of 155 degrees, hold for an hour. Sparge with 6 gallons 170 degree water. Boil, chill, aerate and pitch.

Fermentation Notes  

Fermented in glass at 45 degrees F for two weeks. Rack to secondary for two weeks. Prime with 3/4 cup dextrose and bottle.

Original gravity: 1.058
Final gravity: 1.012
