Ingredients List  

20 lbs DWC Munich Malt
5 lbs 2-row malt
5 lbs Pils malt
3.5 lbs 30L crystal malt
1.5 lbs carapils
4 oz Hallertaur (4.6% alpha, 60 minutes)
1 oz Saaz (3.1% alpha, 30 minutes)
Wyeast 2206 Bavarian Lager

Brewing Notes  

Triple decoction mash: mash in w/ 7.5 gallons brewing water to reach 90 degrees. First decoction elevates temperature to 123; hold for 30 minutes. Second decoction elevates temperature to 150; hold for 60 minutes. Third decoction elevates temperature to 160; hold for 15 minutes. Boost temperature to 170 for mash-out. Sparge w/ 6.5 gallons of 170 degree water.

Fermentation Notes  

Primary fermentation 14 days @50 F. Secondary 14 days @50 F. Prime with 2 cups corn sugar and bottle condition.

Gravity  

Original gravity: 1.075
Final gravity: 1.017
