Ingredients List  

6 lbs Briess pale malt
1 lbs rolled oats
1 lbs roast barley
8 ozs wheat malt
3 ozs chocolate malt
1 oz black malt
0.5 oz Northern Brewer leaf (7.9% alpha, 60 minutes)
0.5 oz Northern Brewer leaf (7.9% alpha, 35 minutes)
0.5 oz EK Goldings plug (5.2% alpha, 10 minutes)
1 tsp yeast nutrient
1 tsp Irish moss (10 minutes)
Yeast Lab A05 Irish Ale yeast, stepped up

Brewing Notes  

Mash in at 143 degrees, then pull a single decoction of 1 gallon and boil for 20 minutes. Return to main mash and stabilize at 152 degrees, hold for 30 minutes. Sparge with 4 gallons carbon filtered water with 1 teaspoon gypsum at 168 degrees. Boil 90 minutes.

Fermentation Notes  

Fermented in glass at 64 degrees for 10 days. Racked to secondary for 3 weeks. Bottled with 3/4 cup dextrose for priming.
