0.5 lbs unmalted wheat
1 lbs English Peat-smoked malt
1 lbs cherry-smoked 2-row malt
2 oz Hallertau (4.7% alpha, 60 minutes)
1 oz Hallertau (4.7% alpha, 30 minutes)
0.5 oz Saaz (3.5% alpha, 5 minutes)
1 tsp gypsum in the mash
RTP Czech Pilsner Lager yeast

Brewing Notes  

This is a Cherry-smoked Rauchbier. Smoke one pound of 2-row over cherry wood for about 45 minutes. Mash in at 124; hold 30 minutes. Raise to 148; hold 20 minutes. Raise to 155; hold 35 minutes. Raise to 158; hold 55 minutes.

10 days primary. Seven days secondary.
