3.5 lbs Munich malt 20L
3 lbs Munich malt 8L
2 lbs crystal malt 90L
0.2 lbs chocolate malt
1.1 oz Hallertaur leaf (5.3% alpha, 45 minutes)
1 oz Saaz leaf (3.4% alpha, 45 minutes)
Wyeast 2206 Munich lager yeast

Brewing Notes  

25 minutes protein rest at 125 degrees. Single decoction per Eric Warner protocol #3 (see Zymurgy 1993 Special Edition, pg. 22.) Sparge with 8 gallons of 168 degree water. Boil for 100 minutes.

Fermentation Notes  

Primary: 6 weeks at 50 degrees. Secondary: 3 weeks at 50 degrees.

Final gravity: 1.032
