9 lbs Durst Pilsner malt
1 lbs Vienna malt
0.5 oz roast barley
1 oz Saaz plug (3.5% alpha, 45 minutes)
0.5 oz Hallertaur leaf (5.2% alpha, 15 minutes)
0.5 oz Hersbrucker leaf (2.7% alpha, 15 minutes)
0.5 oz Hallertaur leaf (5.2% alpha, 12 minutes)
0.75 oz Saaz plug (3.5% alpha, 12 minutes)
0.5 oz Hallertaur leaf (5.2% alpha, steeped)
0.25 oz Hersbrucker leaf (2.7% alpha, steeped)
Saccromyces Supply Co. Czech Pilsner Lager yeast

Brewing Notes  

Mash in with 2.5 gallons of 130 degree water (carbon-filtered, adjusted to 5.3 pH with phosphoric acid) to reach 126 degrees. Hold for 30 minutes protein rest. Sparge with 4 gallons of 170 degree water over 45 minutes to collect 7 gallons of wort. Boil, cool, aerate and pitch yeast.

Fermentation Notes  

Primary: 5 days at 67 degrees. Secondary: 1 week at 48 degrees. Conditioning: 4 weeks at 45 degrees. Bottle with 7 oz corn sugar.

Final gravity: 1.012
