Ingredients List  

10 lbs Hugh Baird Pale malt
6 lbs Durst Pilsner malt
6 lbs DWC Aromatic malt
1 lbs DWC Special "B" malt
1 lbs DWC wheat malt
1 lbs carapils malt
1 oz Columbus hops (15.2% alpha, 60 minutes)
1 oz Norther Brewer hops (7.5% alpha, 60 minutes)
2.5 oz Goldings (5% alpha, 30 minutes)
1 oz Hallertau Hersbrucker (2.5% alpha, 30 minutes)
2 oz Goldings (5% alpha, 10 minutes)
1 oz Saaz (2.3% alpha, 10 minutes)
1 oz Goldings (5% alpha, dry hop 4 days)
1 oz Saaz (2.3% alpha, dry hop 4 days)
SSC Special Bitter yeast

Brewing Notes  

Single infusion mash, 151 degrees for 90 minutes. Sparge water 5.0 pH (adjusted w/lactic acid). Boil 90 minutes. Aerate 10 minutes w/pure O2.

Fermentation Notes  

Primary: seven days at 69 degrees in glass. Secondary: seven days at 69 degrees in glass.

Gravity  

Original gravity: 1.06
Final gravity: 1.015
