Strawberry Barkshack Gingermead

makes 5 gallons

Ingredients List  

7 lbs Oklahoma wildflower honey
1.5 lbs corn sugar
6 lbs fresh strawberries
4 oz grated fresh ginger
3 tsp yeast nutrient
3 tsp yeast hulls
2 pkgs Red Star champagne yeast, re-hydrated
zest of two oranges

Brewing Notes  

Boiled must 15 minutes, skimming. Add just enough hot must to the strawberries to reach about 170 and hold 15 minutes. Cool and aerate, then pitch yeast.

Fermentation Notes  

Rack off fruit after one week. After one month, rack and add zest of two oranges.
