Fruit Cocktail Beer

makes 4.5 gallon

Ingredients List  

2.2 lbs Premier Light Hopped extract
1 lbs light dry malt extract
18 lbs Thompson seedles grapes, crushed
0.6 lg Watermelon chunks (no rind)
1 lg Cantalope, peeled, sliced, seeds removed
7 ripe plums, halved
1 lb frozen raspberries
no hops (fruit flavor should dominate)
1.5 liter Wyeast 1968

Brewing Notes  

Boil extracts 1 hour in 2.5 gallons of water. Pour hot wort over fruit to pastuerize somewhat. After 15 minutes, top off with cold water to about 6 gallons.

Fermentation Notes  

Rack off fruit to carboy after 1 week. Bottle with 3/4 cup corn sugar when fermentation is complete.
