Ingredients List  

16 lbs DWC Pilsner malt
4 lbs Vienna malt
2 lbs malted wheat
1 lbs carapils malt
1 lbs crystal (40L)
4 oz DWC Special "B" malt
1 oz Columbus hops (15.2% alpha, 60 minutes)
1 oz Hallertau Hersbrucker (2.5% alpha, 60 minutes)
2 oz Hallertau Hersbrucker (2.5% alpha, 30 minutes)
1 oz Tettnanger hops (3.4% alpha, 30 minutes)
1 oz Willamette (5.2% alpha, 30 minutes)
1 oz Hallertau Hersbrucker (2.5% alpha, 10 minutes)
1 tsp Irish moss
YeastLab "Dusseldorf Ale" yeast

Brewing Notes  

All water carbon filtered. Crush grains and mash in with 6 gallons 172 degree water to achieve 155 degree mash temperature. Hold for 90 minutes, then remove 2 gallons of the stiff part of the mash and slowly heat to boil. Boil for 30 minutes, then return to mash. Sparge with 6 gallons 170 degree water. Boil for 90 minutes.

Fermentation Notes  

9 days primary at 65 degrees, 7 days secondary at 65 degrees. Treated with Polyclar at bottling, primed with 3/4 cup corn sugar per 5 gallons. Cold conditioned after carbonation in bottles at 40 degrees for 2 weeks.
