Ingredients List  

10 lbs DWC Pilsner malt
10 lbs Munich malt (10L)
1 lbs Caramunich malt
1 lbs Aromatic malt
0.5 lbs malted wheat
0.75 lbs chocolate malt
7.8 AAU Hallertaur Hersbrucker hops (60 minutes)
5.2 AAU Hallertaur Hersbrucker hops (30 minutes)
4 tsp Irish moss
500 ml L33 Munich Lager yeast

Brewing Notes  

Carbon filter water and mash in to reach protien rest temperature of 133 degrees. Hold for 60 minutes. Remove 14 quarts of stiff mash, slowly bring to a boil. Boil for 30 minutes, then return to main mash to reach starch conversion temperature of 156 degrees. Hold for 60 minutes. Sparge with brewing water at 170 degrees, ph adjusted to 5.74 with lactic acid. Boil for 100 minutes. Chill and aerate thoroughly with filtered air pump, then pitch yeast slurry.

Fermentation Notes  

Primary fermentation: 14 days at 50F. Force carbonate in keg or bottle with 3/4 cup extract per 5 gallons.

Original gravity: 1.053
Final gravity: 1.014
