Ingredients List  

9 lbs Ireks Pilsner malt
1 lbs DWC Biscuit malt
1.5 lbs DWC Caramunich malt
1 lbs DWC Aromatic malt
0.5 lbs wheat malt
1 lbs dark Belgian candy sugar (at 45 minutes into boil)
1 oz Perle hops (8% alpha, 60 minutes in nylon)
Affligem dubbel yeast (cultured from bottle)

Brewing Notes  

Mash in with 14 qts. 129 degree brewing water to reach protein rest of 122 degrees. Hold for 30 min. Raise temperature to 154 degrees for sacchrafication, hold for 2 hours. Raise temperature to 168 degrees to mash out and sparge with 5 gal. of 168 degree brewing water. Boil forf 90 min. with hop addition as above. Aerate and pitch with 1 pt. starter

Fermentation Notes  

Primary fermentation should last 1 to 2 weeks at 65-70F. Transfer to secondary fermenter for 5-8 days. Fine with isinglass and bottle with 1.25 cup corn sugar. .
