Traditional Sparkling Mead (revised)

makes 5 gallons

Ingredients List  

9 lbs unprocessed clover honey
1.7 AAUs Saaz hops (15 minutes in nylon)
1 tbs acid blend (5 minutes)
1 tps yeast energizer (5 minutes)
1 tps yeast hulls (5 minutes)
Montrachet Wine Yeast (200 mils slurry)

Brewing Notes  

All water carbon filtered. Mix honey and 4.5 gallons brewing water. Slowly bring to a boil, scraping the white goo off the top as it forms. Add hop plug (in nylon bag) and boil for 15 minutes. Add other ingredients at 5 minutes to end of boil. Chill to 70 degrees, aerate thoroughly and pitch yeast slurry.

Fermentation Notes  

Primary: four weeks at 80 degrees. Secondary fermentation and clearing: 5 weeks at 80 degrees. Bottled with 1 cup honey and fresh yeast.
